The title has already told you that this is going to be one of the most tasty dishes EVER. Anything that has bacon, garlic, and butter is a recipe for greatness. I served this over a bed of long-grain wild rice and it was so so yummy. If you don't like salmon, you could always substitute chicken instead!
Ingredients:
Ready-to-Serve Long-Grain Wild Rice (I find mine at Aldi by the pastas)
1 Salmon filet
Salt
Pepper
Garlic Powder
2-3 slices of bacon
2 cloves garlic- minced
1/2 stick of butter
1 Tablespoon of pesto
Parmesan
Instructions:
I started this dish by slicing the bacon into strips, cooked them in a cast iron skillet on medium-low heat until they were crispy, and then set them aside on a paper towel. After your bacon is cooked, melt about 1 tablespoon of butter in your skillet. While the butter is melting, season the salmon filet with salt, pepper, and garlic powder. Place the salmon in the skillet- seasoned side down. Cook the salmon on each side for about 5 minutes until the fish is cooked through to your liking. Set it aside while you make the sauce. (Go ahead and put your rice in the microwave while you make your sauce. The ready to serve rice should only take 1:30 minutes in the microwave).
For the sauce: Melt the remaining butter in the skillet, add in the pesto, a little pinch of salt, the minced garlic, and the cooked bacon. Stir for about 1-2 minutes until the sauce is blended and melted.
*I used my grandma's homemade pesto for this recipe, but you can find pre-made pesto at almost every grocery store.
*You can also buy minced garlic in a jar at the grocery store as well.
Serving: Start serving this dish by laying down a bed of rice. Next, place the salmon on top of the rice and then spoon the butter sauce over the salmon. Top with freshly grated parmesan cheese.
*Another side note: I never measure anything, so these are approximate ingredient amounts. I also only cooked this for one person, so if you're making dinner for two, go ahead and double the amount of butter, pesto, garlic, salmon, and bacon.
*You only need one tablespoon of butter to cook the salmon, even if you're making 2 or 3 filets. So don't double the amount of butter you're cooking the salmon in.
